Coconut Flour Banana Keto Cake


Everyone loves a good cake with yummy icing that does not feel like a diet cake. We all simply want a delicious normal cake and that's what this cake delivered. It's about the best keto coconut flour cake I have created and eaten in this lifestyle. I can't wait for you to try it and enjoy it like I did. Let's dive into the recipe without much talk.

Ingredients for Cake

1 Cup of Coconut Flour

4 Whole Eggs

8 Tablespoons of Softened Butter

1/2 Cup of Goya Coconut Milk

1/3 Cup of Erythritol (Powdered)

2 Tablespoons of Banana Extract

1/2 Teaspoon of Baking Powder

1/4 Teaspoon of Pink Salt

Ingredients for Icing

8 ounce Cream Cheese

1/3 Cup of Erythritol (Powdered)


Direction For Cake

Pre- heat oven at 350 Degree Fahrenheit or 176 Degree Celsius. Allow butter to soften at room temperature completely then place it in a bowl and whisk on medium speed using an electric hand mixer. A cake mixer works equally well. Add 4 whole eggs to the butter and whisk well. Add powdered erythritol and whisk. Shake the canned Goya coconut milk will before opening, add the milk and banana extract to the bowl and whisk. Add Coconut flour and mix in with a spatula. You can whisk with electric hand mixer if you like or simply mix well with a spatula like I did. Add baking powder and pink salt. Mix in thoroughly for a good 4-5 mins. Grease a small-medium cake pan and scoop cake batter into it. Use spatula to level it out. Coconut flour can be dense so you have to get creative to smoothen it out in the cake pan. You can swirl it a bit in the pan for even distribution. Also wet the spatula and level cake batter while smoothening top at same time. Place in oven and bake for about 30 minutes. Remove from heat and allow to cool completely before removing from baking pan or icing.


Direction For Icing

Allow cream cheese to soften completely at room temperature. Add softened cream cheese into a bowl and whisk on medium speed. Add powdered erythritol and whisk thoroughly. If you do not have an electric mixer, a spatula will do. You just have to mix for a longer time till well blended and fluffy. Place cooled cake on a cake stand then use a butter knife and apply the icing as you like. A spatula works too. Smoothen icing till you cover the entire cake. Take a slice and enjoy this yum. You should have a soft, moist and delicous cake that does not feel like coconut flour. The banana extract gives it a heavenly smell. Also try using stevia both for cake and icing if you do not have erythritol.
