Coconut Flour Banana Bread
1 cup of coconut flour
6 eggs
1 cup of mozzarella cheese
2 ounce of cream cheese
1 teaspoon baking powder
2 tablespoon psyllium husk
5 drops of liquid stevia
1 teaspoon of banana extract (flavor)
1/4 teaspoon of salt
Directions Pre-heat oven @365 degree Fahrenheit. Melt cheese and set aside to cool. In a food processor, add eggs and blend well. Add coconut flour then blend very well for about 5 mins using the dough button option on your food processor. Add melted cheese and blend. Add stevia, banana extract, baking powder and husk then blend all together for another 5 mins. Place parchment paper on a baking pan. Wet your hands and take some bread batter and mold as you like. Place all batter molds on parchment paper then bake for 28 minutes or till golden brown. It should be crispy on the outside and soft on the inside. Enjoy!
